Spinach Palya (ಪಾಲಕ್ ಸೊಪ್ಪಿನ ಪಲ್ಯ)

A simple South Indian style spinach stir-fry with coconut, seasoned with mustard, urad dal, and a hint of lemon.

Ingredients

  • Spinach leaves – 1 bunch
  • Green chillies – 2
  • Red chilli – 1
  • Grated coconut – 4 tablespoons
  • Onion – 1, sliced
  • Sugar – ¼ teaspoon
  • Salt – to taste
  • Lemon juice – a few drops
  • For seasoning: oil – 3 tablespoons, urad dal – ½ teaspoon, cumin seeds – ½ teaspoon, red chilli – 1

Instructions

  1. Wash the spinach leaves thoroughly, chop finely, and set aside.
  2. Heat oil in a pan and add red chilli, urad dal, and cumin seeds. Once roasted, add the sliced green chillies.

  4. Add the chopped onion and sauté for a while.
  5. Add the chopped spinach, cover with a lid, and cook for 7–8 minutes without adding any water.
  6. Once half-cooked, add salt and sugar and mix well.
  7. Once done, add the grated coconut and remove from the flame.
  8. Add the lemon juice and mix well. Serve with rice or chapathi.

Tips

  • Cooking the spinach covered without added water helps retain its color and flavor better.
  • Add the lemon juice only after removing from heat, so the flavor stays fresh rather than turning bitter from overcooking.
