Here is a recipe which I learnt from my Mother-in-law. She also likes a lot and prepares it for breakfast at-least once in two weeks. Of course she uses only the the grated cucumber, but I normally use potato and carrot in addition to this. Try this recipe, and I am sure, you will like it :)

Akki Rotti (ಅಕ್ಕಿ ರೊಟ್ಟಿ)

A savory rice flour flatbread made with grated cucumber, potato, and carrot — a wholesome breakfast handed down from your mother-in-law.

Ingredients

  • Rice flour – around 2 cups
  • Cucumber, medium size – 2, grated
  • Potato – 1, grated
  • Carrot – 1, grated
  • Onion, medium size – 2, finely chopped
  • Green chillies – 4–5, finely chopped
  • Curry leaves, chopped
  • Salt – to taste
  • Oil or butter

Instructions

  1. Grate all the vegetables, and finely chop the onion and chillies.
  2. Mix the grated vegetables with chopped onion, chillies, curry leaves, and salt. Add the rice flour and mix well.

  4. The dough should be a bit watery — if it's too dry, the rotti will turn out hard. Add a little curd if it looks dry.
  5. Let it rest for 20 minutes. Heat a tawa, place the batter directly on it, and spread thinly with your hands into round rottis. Alternatively, you can shape the rotti on a banana leaf and then transfer it to the tawa.
  6. Apply some butter or oil once it's on the tawa.
  7. Once you see golden brown spots on both sides, remove and serve with butter.

Tips

  • Akki Rotti tastes even better when left on the tawa a little longer over medium-low heat.
  • If you can get banana leaves, use them to pat the rottis — they add a lovely aroma and help you get the rottis extra thin.
