Paladya is one of the authentic curry recipes of Havyakas. It is prepared using the butter milk or sour curd. You can use okra, cucumber, dosakai (Yellow cucumber) or even potatoes for preparing this recipe.

Paladya (ಪಳದ್ಯ)

An authentic Havyaka curry made with buttermilk or sour curd and a ground coconut-spice paste — traditionally prepared with okra, cucumber, dosakai, or potatoes.

Ingredients

  • Okra – 5–6 (or substitute cucumber, dosakai, or potatoes)
  • Grated coconut – 1 cup
  • Dry red chilli – 1
  • Green chillies – 2
  • Coriander seeds – 1½ teaspoons
  • Mustard seeds – ½ teaspoon
  • Turmeric – ¼ teaspoon
  • Curry leaves – a few
  • Lime – ½
  • Salt – to taste
  • Buttermilk
  • For seasoning: oil – ½ teaspoon, split black gram (urad dal) – ½ teaspoon, a pinch of asafoetida, mustard seeds – ¼ teaspoon

Instructions

  1. Wash the okra thoroughly, drain, and wipe dry with a cloth to remove all moisture.
  2. In a vessel, add about 2 cups of water, salt, and a squeeze of lime to taste, then bring to a boil with the lid on.

  4. Cut the okra into slightly large pieces and set aside.
  5. Grind the red chilli, green chillies, coriander seeds, mustard seeds, turmeric, and 2 curry leaves with the grated coconut into a smooth paste, adding water as needed.
  6. Once the water starts boiling, add the okra pieces and cook for 5–6 minutes (2 minutes if using frozen okra).
  7. When the okra is half-cooked, add the ground paste and a little more water if needed, along with a few curry leaves. Let it boil for another 2–3 minutes.
  8. Do the seasoning while the curry is still hot.
  9. Just before serving, add some buttermilk to the warm Paladya and serve with rice.

    a suggestion..'few'means none.'A few' means 'some'.
    eg: few people come here...hardly anyone comes here
    A FEW people came home...some,not many, people came home.
    thus your recipe should read :'A few curry leaves"
